Suklaa Festival of Learning

The London Festival of Learning is a 3-day conference which brings together “some of the brightest and influential brains in artificial intelligence and other advanced technologies to present their work, to network and to share ideas” With over 800+ international guests, Lettice was called in to assist on the final night of celebrations.

Located under a marquee in Russel Square on a perfect English summer day, it was decided to create the feel of an English festival, through style, décor, and food design.  The interior consisted of all things red, white, and blue – from bunting flags to parasols, and from little picket fences to poofs and sunchairs, it truly did feel like a mini-English festival.

The Food:

We designed a menu which consisted of 9 different substantial canapes to create a “food-stall” festival feel.

The burgers were the first to enter the conference space, and since they had a choice of three, seemed to be one of the most popular dishes for the day. The British beef burger with cheddar cheese on a brioche bun became the favourite option, followed closely in a tied second place by both the vegetarian and the pork options. The vegetarian burger consisted of a whole roasted portobello mushroom, with blue cheese, rocket, and caramelized onion, and the spit roast pork with apple sauce was served on a white floury bap.

After the burgers were devoured, the rest of the substantial canapés were shared around the room by our staff dressed in blue and white striped butcher-aprons.  Our festival-inspired menu consisted of:

  • Mushy pea croquettes with triple cooked chips and homemade tartar sauce
  • Apple & sage sausages hot buttery mash and Bramley’s apple sauce
  • Summer vegetable risotto
  • Cones of triple cooked chips
  • London Pride beer battered cod with triple cooked chips and homemade tartar sauce

For dessert, the guests were treated to a traditional English inspired dish, strawberries and cream. With help from our friends at Café Bon Bon, we also had two ice-cream tricycles in service, to really encompass the true festival ambiance.

The Drinks:

Keeping in theme with the décor and food, we created two rustic wooden bars which hosted the drinks. With a choice of white and red wine, craft beers, Pimms No 1 Cup, and a choice of soft cocktails, the summer-feel was felt all around the room.
