Lettice How To: British Blinis

Our delicious Royal Wedding British blini recipe is perfect to feed the crowds over the Jubilee Weekend!

Makes about 30 little blinis


Ingredients:

1 jubilee mug (or any normal one will do) of self-raising flour

1 Large egg

Milk to mix

Pinch of salt

Various flavourings (you can add herbs like dill and chives for smoked salmon filings, a spoonful of horseradish for beef, a touch of curry powder for coronation chicken, or a little sugar for pudding pancakes!)

Method:

Place the flour into a mixing bowl, add the salt & break the egg into the middle. Gradually add milk, whisking continuously, until you have a smooth, thick batter.

Drop the batter in teaspoonfuls into a hot, lightly oiled pan, and wait until little bubbles appear on the top surface of the pancake. Flip them over and cook on the other side until beginning to brown and cooked all the way through. Cook and then layer up with your choice of filling!
